Strawberry, Orange and Mint Salad


To me, this recipe represents the transition of Winter into Spring into Summer, and the blending of the three seasons.
Right now, good, quality strawberries are starting to come into season. Oranges, whose season ended in mid April, are at their sweetest after a month mellowing in cold storage. Mint, at its peak flavor due to cool nights, warm days and abundant rain, binds the tart berries and sweet oranges together to create a light, refreshing dessert salad


Strawberry, Orange and Mint Salad

1 pound strawberries, quartered
4 oranges, peeled and segmented How to Segment an Orange
1/4 cup fresh mint, chopped
1-2 tablespoons brown sugar

Toss ingredients together in a large bowl.
Cover and let macerate for 30 minutes
