Basil Pesto
I harvested my first planting of basil today. Since pesto is one of Joe-Chuck's most favorite foods in the world I whipped up a big batch to put in the freezer.
Basil Pesto
2 cups packed basil
2 cloves garlic
1/4 cup pine nuts
1/2 cup olive oil, plus extra for topping
Salt and pepper to taste
1/4 cup shredded parmigiano reggiano cheese
Blend basil, garlic, pine nuts and cheese in food processor until finely chopped. Add oil and blend until smooth. Add salt and pepper to taste. If freezing, pour into half pint jars and top each with oil to cover pesto. Seal with a flat lid and ring.
