Harvesting Shallots

Shallots are a delicious and versatile vegetable in the kitchen. And at upwards of $4 a pound they are also expensive. Thankfully they are one of the easiest veggies to grow. I planted 2 varieties (red and yellow) of shallot at the end of March. Shallots take approximately 100 days to mature. They are sweet and have a combined flavor of onions, garlic and scallions.

Notice how the tips of the leaves are dry and they are beginning to yellow? This is how you tell that they are ready to harvest

 

I planted one small bulb and as it grew it split into multiple shallots. Each bulb produced 3-9 shallots. This one has five
 

Here are some of the harvested shallots. I will leave them out to cure in the sun for a couple days, then braid the tops and hang them for a couple weeks to finish curing in a warm, dark and dry place
