Turkey Scramble
This morning I made a scramble with some leftover turkey and stuffing from Sunday's turkey. Scrambles are a great way to use up leftovers and they are pretty tasty too!
Turkey Scramble
6large eggs
1/4 teaspoon salt
Fresh ground pepper
2 teaspoons butter
1/3 cup shredded turkey
1/3 cup prepared stuffing
1/2 cup shredded Pepper Jack cheese
Fresh chopped chives for garnish
Beat eggs, salt and pepper in a bowl until blended. Melt butter in a skillet over medium heat. Heat turkey and stuffing until turkey begins to brown. Reduce heat to low, stir in eggs and cook, folding gently, until eggs are almost cooked through, about 2 minutes. Add cheese and cook and fold for 1 more minute. Garnish with chives.
