Crystallized Lilac Blossoms





My lilac is in full bloom so now is the time to make this year's batch of crystallized lilac blossoms. I make 10-12 dozen each year to use as decoration for cakes and cupcakes throughout the summer and fall. It is best to use the dark purple lilacs since they don't fade as much. If you want to crystallize white lilacs use them within a month as they tend to brown.




Crystallized Lilac Blossoms

10-12 dozen lilac blossoms
1 egg white
1 tablespoon water
1/4 cup granulated sugar
Violet icing color




Line a plate with waxed paper.
Combine egg white and water in a small bowl and mix with a fork until foamy.
Combine sugar and icing color in another small bowl. The color goes a long way so use it sparingly. I use a tooth pick and dip the tip into the color and rub it into the sugar with my hands until it is evenly colored.





Now the time consuming part. Using a small paint brush, brush the egg wash onto the front and back of the lilac blossoms.







Coat the blossom in the sugar and place on the waxed paper.





Repeat ....a lot. It usually takes me about an hour to crystallize 12 dozen blossoms.
Let blossoms air dry for 24-48 hours then store in an air tight container for up to six months.
