February Garden Total and Bacon and Leek Mini Crustless Quiches
February is not a very big month for fresh produce but with a little planning a few things can be grown and harvested here in the PNW.
Here is what I picked this month:
8 ounces salad greens
8 ounces leeks
Month total: 1 pound
Year total: 1 pound
Harvest Recipe:
Bacon and Leek Mini Crustless Quiches
8 ounces bacon
8 ounces leeks, chopped
1/3 cup grated Gruyere cheese
¼ cup cornstarch
1¼ cups milk
2 large eggs
2 large egg yolks
1 cup cream
¾ teaspoon salt
1/8 teaspoon nutmeg
Oil
Heat oven to 450°F
Fry bacon over medium heat until crisp. Remove from pan and drain on paper toweling. Crumble and set aside.
Drain off all but 2 teaspoons bacon grease. Place leeks in pan and cook until they begin to brown. Set aside.
In a medium bowl whisk together cornstarch and ¼ cup of the milk until smooth. Whisk in eggs and yolks until smooth. Whisk in remaining milk, cream salt and nutmeg.
Oil two 24 count mini muffin tins. Place a pinch of cheese into each muffin cup. Divide the bacon and leeks among each muffin cup.
Pour 1 tablespoon egg mixture into each muffin cup.
Bake until quiches puff up and begin to brown, 15-18 minutes. Cool for 10 minutes, then run a knife around the edge of each muffin cup and lift out each quiche.
